Three easy Bored of Lunch airfryer recipes to try – and they take less than 30 minutes

And there's a hack you can use with tinned beans and sausages to make one of these recipes even cheaper

  • 400g tin black beans, drained, or refried beans
  • 1/2tsp ground cumin
  • Juice 1 lime
  • 6tbsp tomato purée
  • 6 mini tortilla wraps
  • 3 eggs
  • 30g chorizo

To garnish

  • Hot sauce of your choice
  • Tomato salsa
  • 30g feta, crumbled
  • Handful fresh coriander
  • 1/2 ripe avocado, diced
  • 1 lime, cut into wedges
  1. In a bowl, combine the beans, cumin, lime juice, 2tbsp tomato purée and some salt and pepper.
  2. Spread the remaining tomato purée over three of the tortilla wraps, then top each with the remaining three tortillas. This helps the tortillas stay flat and not curl upwards during cooking.
  3. Spread the bean mixture evenly over the top tortillas, leaving room for an egg in the middle. Crack an egg into each hole and crumble over the chorizo. Air fry for 7-8 minutes at 190°C.
  4. Finish with the garnishes – and enjoy the flavour bomb.

SAUSAGE, BEAN & CHEESE MELT

  • 320g ready-rolled puff pastry sheet
  • 2-3 cooked, regular or cocktail sausages, or 150g cooked ham, cut into chunks
  • 150g tin baked beans
  • 60g cheddar, grated
  • 1 egg, beaten
  1. Unroll the puff pastry and divide into six even rectangles.
  2. In a bowl, mix the sausage or ham chunks with the baked beans and cheese, then divide the filling between three of the puff pastry rectangles, leaving a 1cm border around the edge.
  3. Brush the outer rim of each pastry with the beaten egg and cover with one of the remaining three pastry rectangles, pressing down with a fork to seal. Brush the tops with the beaten egg. Slash the top of each a couple of times with a knife. If you have time to chill the pastries in the fridge for 10 minutes, it will improve the end result.
  4. Transfer the pastries on to strips of baking paper (this will help with removing them when they’re hot and fragile) and air fry at 200°C for 10-12 minutes. Get ready to enter cheesy, beany, sausage-melt heaven. 

Top tip!

To make this even cheaper and quicker, use tinned beans with sausages and then just mix with the cheese.

SWEET CHILLI PRAWN COCKTAIL PITTA

  • 170g raw, peeled prawns
  • 1/2tsp paprika
  • 2 pitta breads

For the sauce

  • 2tsp dijon mustard
  • 4tbsp light mayonnaise
  • 2tbsp sweet chilli sauce
  • 1tsp Worcestershire sauce
  • Juice 1/2 lemon
  • 1tsp paprika

To serve

  • Cucumber slices
  • Shredded lettuce
  • Chopped chives
  • 1/2tsp chilli oil per pitta (optional)

  1. Coat the prawns in the paprika, season, and then air fry for 5-7 minutes at 180°C until they turn pink.
  2. In a bowl, mix together all the sauce ingredients.
  3. Around 2 minutes before the prawns are ready, cut the pittas in half across the middle to create pockets, then air fry for 2 minutes, so they give a warm and crunchy welcome to the prawns.
  4. Toss the cooked prawns in the sauce and assemble your pittas with the prawns, cucumber and lettuce, then garnish with chopped chives and a splash of chilli oil, if you like.
