YOU NEED: 1 tbsp olive oil; 1 onion; 1 red pepper; 2 cloves garlic, peeled and finely chopped; . 1 tsp ground paprika; 250ml coconut cream; 2 tbsp crunchy peanut butter; 580g raw king prawns; 2 tbsp fresh coriander; 1 tbsp of salted peanuts; 1 lime, cut into wedges.

METHOD: Heat 1tsp of the oil in a saucepan and cook the onion over a medium heat for three-four minutes or until softened.

Add pepper and garlic and cook for a further three minutes. Add the paprika, season and stir well. Cook for a further minute before stirring in the coconut cream and peanut butter.

Leave this to simmer for five-ten minutes or until the sauce has thickened.

Then, take 12 skewers and thread four to five prawns on each. Brush with the remaining oil then barbecue for two minutes on each side or until the prawns are pink all the way through and charred lightly on both sides.

Place the skewers on a platter and spoon the sauce over.

Sprinkle with coriander and crushed toasted peanuts and serve with lime wedges and more sauce.
