These are the secret codes that restaurants use to flag a priority guest…and also the one that means you’ll NEVER get a table

IF YOU are dining at a top Michelin-star restaurant take note – the staff may have secret codes for flagging priority guests.

Wine expert Bianca Bosker shadowed a certified sommelier at a two-Michelin-starred restaurant and revealed the mystery codes used to classify guests.

In her new book  she said that staff at the critically acclaimed Marea in New York have a file for all of its guests.

This takes into consideration the guests' preferences, dining history and their level of importance to staff.

She wrote that a guest can be labelled a “PX” which stands for “personne extraordinaire” or someone who spends a lot of money.

She said: “It's appended to reservations made by big spenders, owners' friends, high-rolling regulars, and special guests, like Chef Daniel Humm of Eleven Madison Park, who'd be coming in tonight at eight.

“They are to be coddled, spoiled, humoured, and upsold at all costs.”

Other codes used are VIP or BLR, which is short for baller, to label this prioritised group.

Guests who require special attention may be called “HWC” which stands for Handle With Care and “F/O” means friends of the owner.

If you are showing poor form you may be called “86 DO NOT ACCEPT”, but if you are being flashy with money and polite you may be called "NEVER REFUSE."

Some guests who dine occasionally at the Marea may be called "occasional wine PX," or "wine PX has-been.”

And other big names may be called "ATG," meaning "according to Google", such as guests whose professions can be researched online.

Bianca said that the information and codes help staff to interact effectively with the guests and sell them the most amount of wine.
